Amaretti Baked Pears desserts, fruits 4 firm ripe pears 1/3 cup granulated sugar 2 tablespoons butter; in bits 2 tablespoons amaretto or pear nectar 1/2 cup mascarpone or ricotta cheese 1/2 cup coarsely crushed amaretti 1 fresh mint leaves; optional Peel pears; slice in half lengthwise. Using melon baller, remove cores. Arrange halves, cut side up, in single layer in shallow baking dish. Sprinkle with sugar. Dot with butter. Drizzle with amaretto. Bake, uncovered and basting occasionally with pan juices, in centre of 400°F oven for 30 to 45 minutes or until tender. Let cool slightly. Arrange 2 halves on each dessert plate. Fill centres with cheese; sprinkle with amaretti crumbs. Serve with juices. Garnish with mint (if using).
