Tuna Dressing over Pasta Nicoise fish, pasta, salads 12 ounces rotini 1 1/2 cups chopped tomatoes 1 1/4 cups chopped cucumbers 3/4 cup chopped red onions 1/3 cup sliced black olives 1/3 cup chopped green onions ----Sauce---- 1 can (6 oz) flaked tuna water-packed, 1/2 cup chicken stock 2 tablespoons light mayonnaise 2 tablespoons vegetable oil 1 tablespoon lemon juice 1 tablespoon drained capers 1 1/2 teaspoons minced garlic Put tuna, stock, mayonnaise, oil, lemon juice, capers and garlic in food processor; process until smooth. In large pot of boiling water cook pasta according to package directions or until tender but firm; rinse under cold water and drain. Put in large serving bowl, along with tomatoes, cucumbers, onions, olives, green onions and tuna sauce; toss well. Serve at room temperature or chilled.
