Sesame Salmon Patties fish, potatoes 2 cups cold mashed cooked potatoes 1 can (7-1/2 oz) salmon; drained and flaked 2 tablespoons mayonnaise 1 tablespoon finely chopped fresh parsley 1/2 teaspoon dried dill-weed 1/2 teaspoon grated lemon rind pinch cayenne pepper salt 1/4 cup sesame seeds 2 tablespoons butter 2 tablespoons vegetable oil In bowl, mix together potatoes, salmon, mayonnaise, parsley, dill weed, lemon rind, cayenne, and salt to taste, until smooth. With floured hands, form mixture into 8 patties, each about 1 inch thick. Place sesame seeds in shallow dish and press patties into seeds to coat both sides. In large skillet over low heat, melt half of the butter with half of the oil. Fry patties, in batches, for 5 minutes on each side, using spatula to carefully turn patties over; add remaining butter and oil as necessary.
