Salmon Fillets With Black Bean Sauce fish 1 pound salmon fillets 1/4 cup green onions; chopped ----SAUCE---- 1/2 cup chicken stock 5 teaspoons brown sugar 1 tablespoon black bean sauce 2 teaspoons rice wine vinegar 2 teaspoons soy sauce 2 teaspoons sesame oil 1 1/4 teaspoons cornstarch 3/4 teaspoon ginger root; minced 1/2 teaspoon garlic; minced Preheat oven to 425 F. Spray baking dish with vegetable spray. Put salmon fillets in single layer in prepared baking dish. Sauce: In saucepan whisk together stock, brown sugar, black bean sauce, vinegar, soy sauce, sesame oil, cornstarch, ginger and garlic; cook over medium heat, stirring, for 4 minutes or until sauce thickens slightly. Pour over fish and bake uncovered 10 minutes per inch thickness of fish, or until fish flakes easily when pierced with a fork. Serve sprinkled with green onions.
