Potato Tuna Melt fish, potatoes 2 large baking potatoes water-packed tuna 1/4 cup light cucumber salad dressing 1 green onion; chopped celery; finely chopped 1 pinch (each) salt and pepper 1/4 cup Cheddar cheese; shredded Scrub potatoes; pierce all over with fork. Microwave at HIGH for about 6 minutes or until tender and potatoes yield to gentle pressure, rotating andturning potatoes halfway through. (Or bake in 400F oven for 45 minutes.) Let stand 5 minutes. Cut off one-quarter of each potato lengthwise. Scoop flesh from tops and 1-inch layer from each bottom. Place in bowl and mash with fork. Drain tuna; add to bowl, breaking up with fork. Stir in salad dressing, onion, celery, salt and pepper until combined. Place potato shells, cut side up, on baking sheet; mound tuna mixture on top. Sprinkle evenly with cheese. Broil for about 3 minutes or until filling is hot and cheese is bubbly.
