Lean Fish with Salsa

fish

8 cups fresh spinach; packed
2 cod fillet (3 oz)
2 tablespoon lime juice
1 pinch (each) salt and pepper
----SALSA----
2 tablespoons lime juice
2 cloves garlic; minced
1 tablespoon granulated sugar
dash hot pepper sauce
1/2 cup mango chutney; peeled and diced
2 tablespoons red onion; finely chopped
1 sweet red pepper; diced

Salsa: In bowl, mix lime juice, garlic, sugar and hot pepper sauce. Add mango, onion and red pepper; toss to coat. Trim and rinse spinach; shake off excess water and arrange spinach, with just the water clinging to leaves, over bottom of nonstick skillet. Top with fish; sprinkle with lime juice, salt and pepper. Cover and steam for 3 to 4 minutes or until fish flakes easily when tested with fork. Serve with salsa.
