Fish Baked in Black Bean Sauce

10 ounces fresh spinach; chopped
1 carrot; grated
1 pound bluefish fillets
2 tablespoons black bean sauce
1 tablespoon liquid honey
1 tablespoon lemon juice
1 teaspoon gingerroot; chopped
2 green onions; chopped

Spread chopped spinach in 8-inch square baking dish; sprinkle with carrot. Arrange fish fillets on top. In small bowl, stir together black bean sauce,honey, lemon juice, chopped gingerroot and green onions; spread evenly over fish fillets. Cover baking dish with foil. Bake in 425 F oven for 10 to 12 minutes or until fish flakes easily when tested with a fork.
