Cod With Fresh Tomato And Tomatillo Sauce fish 1/4 cup flour 1/3 cup grated Parmesan cheese 1/2 cup milk 1 pound cod fillets; serving-size pieces salt and pepper 4 tablespoons vegetable oil; divided 1 shallot; chopped fine 1 jalapeño pepper; chopped fine 1 clove garlic; chopped fine 4 tomatillos; husked, rinsed, chopped 2 medium tomatoes; chopped 2 tablespoons chopped fresh basil 1 1/2 teaspoons lime juice Combine flour and Parmesan cheese on plate. Put milk in shallow dish. Lightly sprinkle cod fillets with salt and pepper; dip in flour mixture to coat lightly. Dip in milk and then in flour mixture again. In large heavy frypan, heat 3 tablespoons oil over medium heat. Add fillets and sauté for 8 to 10 minutes or until fish flakes easily when tested with a fork, turning once. Transfer fillets to serving platter. Meanwhile, heat remaining 1 tablespoon oil in small heavy frypan over medium heat. Add shallot, jalapeno pepper and garlic; sauté for 1 minute. Add tomatillos and cook for 1 minute, stirring frequently. Add tomatoes and basil; heat through. Stir in lime juice. Spoon over fillets.
