Egg Fajita

eggs, breakfast

1/2 teaspoon vegetable oil
1 green onion; sliced
1 egg; beaten
pinch (each) salt and pepper
1 8-inch flour tortilla
2 tablespoons salsa
2 tablespoons shredded Monterey Jack cheese
strips sweet red or green pepper

In nonstick skillet, heat oil over medium heat; cook onion for about 2 minutes or until softened. Reduce heat to low. Pour in egg, rotating skillet to coat bottom. Cook for 3 to 4 minutes or until completely set. Sprinkle with salt and pepper. Remove from pan; cut into strips. Microwave tortilla at High for 5 seconds. (Or warm in 350°F oven for 2 minutes.) Place egg strips along centre. Top with salsa, cheese and red pepper strips. Fold up bottom; fold over sides to enclose filling.
