Easy Rice Pudding desserts, rice 1 cup cooked rice 1/2 cup lightly packed brown sugar 2 eggs; beaten 2 cups milk 1/2 cup raisins 1/2 teaspoon vanilla 1/4 teaspoon salt freshly grated nutmeg cream or milk; optional Make this good, old-fashioned dessert right in the baking pan. It's a marvelous time saver and makes great use of leftovers. In 8-inch square baking dish combine rice, sugar and eggs, stir well to blend. Stir in milk, raisins, vanilla and salt. Sprinkle with nutmeg to taste. Place in pan of hot water and bake in 325°F oven for about 1 hour or until almost set. Serve warm or cold, with a pitcher of cream (if using).
