Deep Dish Apple Cake desserts, fruits 6 apples; cored; peeled, sliced 1/2 cup golden raisins grated peel and juice of 1 lemon 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon ginger ----Topping---- 1/2 cup butter or margarine 9 tablespoons sugar 2 eggs 1 teaspoon vanilla 1 tablespoon warm water 1 cup flour 1 teaspoon baking powder 3/4 teaspoon nutmeg Preheat oven to 350°F. Combine apples, raisins, lemon peel and juice and spices in a 2-quart casserole. Mix well. In a large bowl, combine butter and sugar; beat with electric beaters until fluffy; beat in eggs, vanilla and water. Combine flour, baking powder and nutmeg. Add to batter, beating constantly. When batter is fully combined and fluffy, pile on top of apple mixture. Spread evenly. Bake about 35-45 minutes or until a skewer inserted in the middle comes out clean. Let stand about 1/2 hour before serving warm. Serving suggestion: If your first course was only a lettuce salad, scoop some vanilla ice cream on top of the warm cake before serving.
