Traditional Fruitcake cakes, christmas 1 1/4 cups yellow raisins 1 1/2 cups dark raisins 1/2 cup currants 1 cup candied cherries; whole 1 cup mixed candied orange and lemon peel 1 cup dates; pitted, chopped, packed 3/4 cup brandy, dark rum or whisky; very hot 1 1/2 cups walnuts; chopped 1 cup unsalted butter; melted and cooled 1 3/4 cups white sugar 1/2 cup brown sugar; packed 4 eggs 2 tablespoons honey or corn syrup; preferably Lyle's 3 cups all-purpose flour 1/2 teaspoon salt 1 1/2 teaspoons baking powder 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon cloves brandy, rum or whisky; same as for fruit non-stick cooking spray cheesecloth A couple of hours (or up to two days) before making recipe, soak fruit. Place the dark raisins, yellow raisins, currants, orange or lemon peel, cherries and dates in a large bowl. Cover and toss with hot brandy, rum or whisky. Preheat oven to 325şF. Line two 9- x 5-inch loaf pans or one 9- or 10-inch tube pan with parchment paper and spray with non-stick cooking spray. In a large mixing bowl, blend butter with white and brown sugars, then blend in eggs, and honey or corn syrup. Fold in flour, salt, baking powder and spices, and then fold in fruit and nuts. Make sure bottom of batter is well blended. Spoon into prepared pans. At this point, you can also garnish the top of the cake with extra cherries as a decorative touch. Place pans on a baking sheet (this protects the bottom of cakes from baking more than tops) and place in oven. Bake until cake tests done, about 2-3 hours. Cover top with foil if top is baking faster than interior, and reduce heat to 300şF. Let cake rest in pan for 15 minutes before removing to a cake rack to cool completely. Soak a large cheesecloth with brandy, rum or whisky. Make small holes all over cake surface with a cake tester or long skewer. Cover entire cake with soaked cheesecloth. Then wrap in plastic and then a clean tea towel. Place in a cake tin if you have one on hand, or wrap tightly in foil.
