Spiced Sweet Potato Wedges vegetables, christmas 3 sweet potatoes; (about 2 1/4 lb) 1/3 cup olive oil 3 tablespoons lemon juice 3 tablespoons water 1 tablespoon tomato paste 2 tablespoons ground coriander seeds 1 tablespoon ground cumin 1 tablespoon ground ginger 2 teaspoons salt 3/4 teaspoon hot pepper; up to 1 Preheat oven to 400°F. Peel sweet potatoes and cut each into 8 lengthwise wedges. In a large bowl, combine olive oil, lemon juice, water, tomato paste, coriander, cumin, ginger, salt and hot pepper sauce; stir until smooth. Add potatoes and toss until well coated. Oil a roasting pan large enough to hold wedges in a single layer. Add potatoes, scraping any spice mixture that remains in the bowl over top. Roast for 35 to 40 minutes or until potatoes are soft when tested with a sharp knife. If it is more convenient to roast the sweet potatoes at a lower temperature, say 375ºF or 350ºF, put them on the highest rack and increase the roasting time by 15 to 20 minutes.
