Apple-Onion Stuffing turkey, christmas 1/2 cup finely chopped onion 1/2 cup finely chopped celery 1/4 cup bacon drippings or butter 2 cups chopped tart apples 2 tablespoons granulated sugar 2 cups dry bread crumbs 2 tablespoons finely chopped fresh parsley 2 tablespoons finely chopped fresh chives; optional 1/4 teaspoon cinnamon 1/4 teaspoon freshly grated nutmeg 1/4 teaspoon sage 1/4 teaspoon thyme salt freshly ground pepper boiling water; optional Sage and thyme team up with cinnamon and nutmeg to give this stuffing its special flavor. Fresh parsley and chives round out the seasoning. Use stuffing for turkey, chicken or Cornish hens. Cook onion and celery in bacon drippings until softened. Cook, stirring, over low heat for about 5 minutes Add remaining ingredients except boiling water, adding salt and pepper to taste. (If using fine dry crumbs, you may need to add 1/4 to 1/2 cup boiling water. Makes about 4 cups, enough for neck cavity or for large roast.
