Basque Potatoes

1/2 cup finely chopped onion
1/2 cup chopped italien parsley
1/2 cup shredded carrot
2 cloves garlic, minced
2 tablespoon spanish olive oil
1 1/2 cup chicken broth
20 1/2 cup cubed potatoes
1 approximately 1
1 salt and pepper to taste

In skillet cook onion, parsley, carrot, and garlic in olive oil until vegetables are tender. Add broth, potatoes, salt, and pepper to taste.Cover and simmer for 10 minutes.
