Basque
is as unique in every way that you can imagine. The area that is in the Basque
country is a region that is part in France and part in Spain. It is 20,664
square kilometers and is located at the end of the Pyrenees on the Bay of
Biscay. There are seven provinces that make up the Basque Country; four
provinces in Spain including Bizkaia, Gipuzkoa, Araba and Nafarroa and three
provinces in France including Lapurdi, Nafarroa Beherea and Zuberoa.
The majority of the Basque community in Spain is self governing and operates
their own parliament, taxation system, police force, university and media, while
on the French side they are governed by France.
The language of the Basque Country is Euskara. It is used throughout the region
but is only the official language in Vizcaya, Guipuzcoa, and Alava. Euskara has
no official standing in France and many of the Basque people have been
victimized throughout history by the French government which is very hostile to
other languages besides French in their country.
So, as you can see preserving their culture and language has been a struggle and
much of their history including recipes were passed from generation to
generation. Their recipes are becoming known around the world as some of the
most flavorful and delectable that you can find. Because of the various dialects
that make up the Basque language plus the community being divided into Spanish
and French you will find that the recipes also differ in some ingredients, even
though they are Basque.
