Moroccan Chicken Casserole

3 cloves garlic
2 tablespoon oil
2 teaspoon ground cumin
2 teaspoon ground ginger
1 teaspoon salt
1 teaspoon ground tumeric
1 teaspoon paprika
1 teaspoon cinnamon
1 freshly ground black pepper
8 chicken legs
2 teaspoon lemon rind, grated
1/2 cup olives
1 cup dates, chopped

Crush, peel & finely chop garlic. Mix together garlic, oil, cumin, ginger, salt, tumeric, paprika, cinnamon & pepper in a bowl. Brush each chicken leg with this mixture to coat chicken surfaces well. Place side by side in a large, flat oven-proof dish. Cover & leave in a cool place for 1 hour. Bake at 180C (350F) for 35 minutes. Uncover. Scatter over lemon rind, olives & dates.
